Decaf has a reputation problem that's mostly deserved — but usually because of how the caffeine was removed, not because of the beans themselves. Swiss Water Process is a different approach, and it's worth understanding what it actually does.
How most decaf is made
The most common commercial decaffeination method uses chemical solvents, typically methylene chloride or ethyl acetate, to extract caffeine from green coffee beans. It works efficiently at scale, which is why it's standard. The beans are washed in solvent, the caffeine binds to it and is removed, and then the solvent is stripped out before roasting.
Residual solvent levels in the finished product are low and within food safety limits. But for café owners positioning themselves around quality, it's a harder story to tell.
What Swiss Water Process does differently
Swiss Water Process removes caffeine using water and a carbon filtration system, with no chemical solvents involved. Green coffee beans are soaked in hot water, which draws out the caffeine along with flavour compounds. That water is then passed through activated carbon filters sized specifically to capture caffeine molecules while allowing smaller flavour compounds through. The result — called Green Coffee Extract — is then used to soak the next batch of beans, removing caffeine without stripping the flavour compounds out again.
It sounds complicated, but the practical result is straightforward: no chemicals, and noticeably better flavour than solvent-processed decaf.
Why it matters for your café
If you're offering decaf as part of your menu, the quality gap between Swiss Water and standard decaf is something your customers are likely to notice, even if they can't name the reason. A well-made Swiss Water decaf should taste like a slightly softer version of the caffeinated blend — same roast character, same mouthfeel, without the edge.
It also gives you something to say about it. "Swiss Water processed, no chemicals" is a simple, credible line that lands with customers who are asking questions about what they're drinking.
Our decaf
Our wholesale decaf is Swiss Water processed and roasted to the same standard as our regular blend. Available in the same pack sizes, ordered the same way — no separate supplier, no minimum decaf commitment.
